That's right, you will need to delete the rules and add them again as you can't edit the 'Interface' type

Right, rushed hope checked rules and you're spot on no editing option.

Removed existing ones and went about adding new ones.

There are a set of existing Skype ones so I click Add ... and enter the following

Interface drop down - pope_eth/ppp1.1
Server Name - Custom Service
Custom Service - PlexMediaServer
Server IP Address - 192.168.1.(iMac static IP address)
Time Schedule - Always On
External Port
Start - 32400 End - 32400
Protocol - TCP
Internal Port
Start - 32400 End - 32400

Click Apply and am greeted with Invalid Session Key, please try again

Doh!

Hold the help desk, I think I may have cracked it.

I've re-input all my Virtual Server settings and disabled and then re-enabled UPnP and I can now see my Server if I disconnect my iPhone from my WiFi and simply use my 3G signal. :D
