This will change at the weekend once I'm happy that it's stable and configured as I need(*). I eventually found that the Quick Start menu allows you to select the 'main port'. Is there any other way to switch the router between DSL and EWAN functionality?
It slightly defeats my purpose if I can't just tell the router to switch DSL as I'd have to reconfigure it all over again.

You need to add another WAN interface under 'Status >> WAN >> WAN Service'
I assume you have already added a 'Ethernet/EWAN' interface for your current setup
So you will need to add a PTM >> PPPOE interface for your switch over
1. Login to the device
2. Click on 'Configuration >> WAN >> WAN Service'
3. Check to see if you already have a 'PTM >> PPPOE' WAN interface added
4. If you have click on the 'Edit' button for this WAN interface and adjust the username and password for your BT VDSL connection
5. If you don't have a PTM >>> PPPOE interface click on the 'Add' button
6. Set the 'WAN Port' to 'DSL'
7. Set the 'Layer2 Interface' to 'PTM'
8. Set the 'Type' to 'PPP over Ethernet'
9. Set the '802.1P Priority' to '0' and the ' 802.1Q VLAN ID' to '101'
10. Enter your broadband username and password in the sections provided
11. Click on 'Next'
12. Under 'Available Routed WAN Interfaces' select your 'PPPOE' connection and click on the arrow pointing left, so the PPPOE interface should now be listed under 'Selected Default Gateway Interfaces'
13. Do the same for 'Available WAN Interfaces' select your PPPOE connection and click on the arrow pointing left so your PPPOE interface should now be listed under 'Selected DNS Server Interfaces'
14. Click on 'Next'
15. You are done, you are now ready for VDSL connection
